I have wanted to make rhubarb slush for a long time but have never taken time to do it! I finally decided to take the plunge and try it. I used a recipe given to my by my cousins wife, Sue, and a recipe from Edie’s Everyday and then added my own twist! Most of the recipes called for Strawberry Jello but I only used part of the package and added fresh strawberries. I’m not always a fan of strawberry jello flavor so….
Since it was an experiment I only made a half batch. I shared it with my friend the other day and it was AMAZING!!! Totally making a full batch again! The original recipes called for Vodka. When searching my liquor cabinet I saw the lemon rum and thought it would be a great addition. I also had planned to use my favorite New Amsterdam Red Berry Vodka but was out of that so I used Dragonberry Vodka I had.
Strawberry Rhubarb Vodka Slush
A fresh, light, sweet but not too sweet slush for those hot summer days.

Ingredients
8 cups chopped Rhubarb (you could use frozen too but make sure to use the juice it gives off)
6 cups water
1- 1 1/2 cups chopped strawberries (I used fresh-you could probably use frozen too but cut down on sugar).
1 (12 oz) can of lemonade concentrate (you could also use pink lemonade)
1/3 cup lemon juice (all I had was the stuff in a bottle-it worked great!)
1/3-1/2 cup sugar
1/2 3 oz package of strawberry Jello (approximate)-can add more if you want
2 cups of rum or Vodka ( I used a combo of 1/2 cup Bacardi Limon rum and 1 1/2 cups dragonberry Vodka since that’s what I had. My FAVORITE vodka is New Amsterdam Red Berry vodka which would be great in it!)
For Serving:
1 can lemon lime soda or vodka/rum used before
Directions
1. Put rhubarb and strawberries in large pot with 6 cups of water.
2. Simmer on medium high heat for 10-15 minutes until everything is mushy
3. I used my stick blender to blend everything and did it 4-7 times for 5-6 sec each. I just wanted to break a bunch of it down for the flavor.
4. Using either a sieve or cheesecloth in the sieve strain the solids out. I used cheesecloth because I could squeeze out more liquids. 🙂
5. While the juice is still warm, add lemonade concentrate, lemon juice, strawberry jello, vodka/rum and 1/3 cup sugar. Stir until all is dissolved.
6. Taste and add the rest of the sugar or more strawberry jello to meet your taste preference.
7. Pour in ice cream bucket and freeze.
8. To serve scoop the slush using an ice cream scoop. Stir in lemon-lime soda or a little more vodka or rum to get it to the right consistency. Enjoy!!
