Gluten Free Gooey Chocolate PB Cheerio Bars

So, I LOVE Cheerios! My family always has, my dad used to have a bowl every morning. When I was young, I wanted to be like dad, so I would have a bowl of Cheerios with milk too. However, as a kid I decided it needed to be sweeter…..so I added sugar…..like a LOT of sugar. Think …. taking a spoonful of cereal and milk while getting 1/8-1/4 of a spoon of sugar from the bottom of the bowl. Now, as I’ve grown I like much less sugar in the morning and don’t care for soggy cereal in milk. I still love Cheerios, though I eat them dry. Now my sugar fix comes from tossing in a couple of chocolate chips per handful of cereal.

I found a recipe that touted itself as a ‘Gooey PB Cereal bar’. I found that it had good flavor but wasn’t very gooey. It actually turned out overly crunchy/hard. So, I set upon a quest to MAKE it gooey! Here are my tweeks.

Gooey Chocolate PB Cheerio Bar

A gooey Cheerio bar with just the right amount of chocolate and a hint of peanut butter.

Ingredients


6 Cups Original Cheerios
4 Tbsp Butter
10 oz Marshmallows
7 oz Jar of Marshmallow Fluff
1/3 cup Peanut Butter
1 1/2 cups semi sweet Chocolate Chips (Divided)

Directions


1. Prepare 9″ x 13″ pan by spraying with non-stick spray or buttering
2. In a large pot over low to medium heat butter to melt.
3. Add Marshmallow and Marshmallow fluff and melt, stirring often to prevent scorching.
4. Add Peanut butter and mix until smooth.
5. Add 1 cup of Chocolate chips and mix until melted.
6. Add cereal and stir to incorporate fully.
7. Pour into prepared pan and smooth
8. Sprinkle 1/2 cup chocolate chips over and press in to be sure they stay.
9. Wait for them to cool and ENJOY!
